About This Cookies

Added loads of cashews make the amazing nutty flavor and crispy texture. Cashews are often used for many dishes and snacks in India. I usually use walnuts or almonds for ingredients of baking, but this time I tried to cashews, and am done this recipe. Cashews have less fat than other nuts, but are rich in vegetable protein. And the amount of calcium is increased by adding some milk powder. So it is perfect for both of adults and kids for snack.

Let’s prepare!

Tools:

  • a large bowl
  • a small bowl
  • Whisk
  • Spatula
  • Measuring cup (or kitchen scale)
  • Measuring spoons
  • Grinder

Ingredients:

  • 2 cups (260g) All-purpose flour
  • 2 tbsp Milk power
  • 1 tsp Baking powder
  • 2 pinches of Salt
  • 1/2 cup (100g) Butter, melted
  • 1 cup (130g) granulated sugar
  • 2 tsp Vanilla essence
  • 80ml Milk
  • 1/2 cup (70g) Cashews
  • 1/4 cup (30g) Raisins, chopped

A tablespoon of skimmed milk powder

Instructions

  1. Pre-heat the oven at 180 degrees centigrade for 10 minutes.
  2. In a small bowl, combine flour, milk powder, and baking power altogether.
  3. In a large bowl, stir melted butter and sugar until they are mixed well.
  4. Add salt, vanilla essence, and chopped raisins to wet ingredients, and mix well.
  5. Add half of flours to the wet mixture, and mix them with a spatula. And add half of milk, and mix in. Add also the rest of flours and milk the same way.
  6. Add grinded cashew and to the bowl, and combine them with your hands (do not knead too much).
  7. Make 24 balls of cookie dough, and make them flat a little pressing each the top .
  8. Now place the cookie ball in the oven and bake for 18-20 minutes.

Notes

  • You can grind cashews the way you like but, it might not combine with the cookie dough if it is too much rough.
  • Adjust the amount of all ingredients to half if you think it is too many cookies.
