About This Cake
This cake is no added eggs and butter. It is made with all natural ingredients on earth. Carrot cake is usually topped with sweet heavy cream or cheese cream. It is a healthier frosting made with Greek yogurt in my recipe. It has lower fats, so it became 67kcal lower than heavy cream frosting per a piece of cake. And, the method is not complicated. So, it is quick and easy to make, yet healthy, and has various nutritional benefits. Ingredients that are easily available in our kitchens. And this cake covers carrot’s taste with fragrance of cinnamon, and nutmeg. So, we recommend it to children who don’t like carrots. Let’s prepare!
Tools:
- 18cm square cake pan (or 15cm round pan, or muffin pan)
- large bowl
- small bowl
- measuring cup (or kitchen scale)

Ingredients:
- 2 (200g) carrots, roughly grated (do not have to peer before grating)
- about 1/2 cup (70g) cone powder
- 3 tbsp coconut oil (or canola or ghee)
- 4 tbsp olive oil
- 2/3 cup (90g) whole wheat flour
- 1/3 cup (40g) jowar powder (sorghum)
- 1 tsp baking powder
- 1/2 tsp cinnamon powder
- 1/2 tsp nutmeg powder
For yogurt frosting
- 1/2 cup (130g) Greek yogurt, at room temperature
- 2 tsp honey
- 1 tsp fresh lemon juice
- Cinnamon powder, sprinkle (optional)
Instructions
Steps to make the cake batter:
- In a large bowl add flour, baking powder, cinnamon powder, and nutmeg powder. Mix altogether.
- In a separate bowl, take oils and sugar. Mix well.
- Add grated carrot to the wet ingredients and mix gently.
- Add dry ingredients to wet ingredients three separate times and mix each time.
- Apply a thin layer of oil to the inside of a cake pan, and transfer cake batter into the pan, and smooth the surface with spoon or spatula.
Steps to bake the cake:
- Pre-heat the oven at 180 degrees centigrade for 5 minutes.
- Now place the cake batter in the oven and bake for 30 minutes.
- To check whether cake is baked properly, insert a toothpick and see if it comes out clean. If it is not baked, then cover the cake top with foil paper and bake it for 5 minutes more.
- Gently remove cake from the cake pan and leave on a wire rack to cool completely.
Steps to frost the cake:
- In a bowl, take yogurt, honey, and lemon juice. Whisk the mixture well.
- Spread yogurt frosting generously on the top of cake. Sprinkle some cinnamon powder on the top.
Notes
- You can process carrots in food processor instead of hand-grating.
- You can add some walnuts and dried fruit.
