About the Scones and Jam
I’ve been into scones since I was a high school student. I was really impressed British teatime through some books and TV. Truth be told, I had a hard time to bake scones well at the early time. Then, I gradually grabbed some hints for a perfect scone while making repeatedly. After that, I always focus on mixing cold ingredients quickly and cutting out sharply.
As for health, good things on this recipe are to change half of plane flour to whole wheat flour, and to choose apple jam which is added a little ground ginger, and cinnamon flavor. Just for fun, the scone with jam should go well with your favorite hot tea. And I’m sure that the golden jam will add an amazing mood to your general teatime.
Three Ingredients for Immunity

Apple -Citric Acid, Pectin
Immune system develops in the intestines. Approximately a thousand kinds of bacteria live in human’s gut. Some of them are good for us, some bad. The balance of intestinal bacteria is different for everyone.
High immunity prefers high ratio of good bacteria that lives in the intestines, such as Bifidobacterium, and Lactic acid bacteria. Good bacteria need to get fed to increase. The feeds for it are food fiber and oligosaccharide.
Pectin, water-soluble fiber contained in an apple, is good feed for good bacteria. And malic acid maintains condition of stomach and intestines.
The peel of an apple is rich in fiber and has antioxidant effects. So, if you want to get a lot of effects from an apple, use a whole apple for the jam.
Ginger -Zingerone, Shogaol
Ginger appeared on historical record of three centuries. Therefore, it can be the oldest vegetable in the world. Ginger has been used in traditional Chinese medicine or remedy from old time.
Zingerone and shogaol, hot components contained in ginger, help to attack bacteria that causes pneumonia. Also, they widen small blood vessels that is cooled and hardened. And they improve blood circulation and warm the body.
Vitamin B12 contained in ginger is a key driver of formation of skin and mucous membranes. So, it helps to maintain the condition of nose and throat.
Enzymes contained in ginger help break down sugars and proteins in stomach and intestines. So, they reduce the burden made by digestion and absorption. Besides, they improve blood circulation in stomach and intestines and activate stomach and intestines.
Cinnamon Stick -Spice
Cinnamon can be expected to boost immunity because it has high antioxidant and bactericidal effects.
Cinnamon is made from the bark of tree, which is rich in fiber that helps in intestinal regulation.
On this recipe, cinnamon stick keeps the golden color of Jam and add its flavor. But, if you want to get more nutritional effects of cinnamon, use cinnamon powder. Though the color changes to brown and the flavor also become stronger, the cinnamon lovers would like it.

- Small saucepan
- Wood spatula
- Large bowl

Ingredients
For Scones:
- 100 grams (2/3 cup) Plain flour
- 100 grams (2/3 cup) Whole wheat flour
- 1 tsp Baking powder
- 50 grams Butter, cold
- 40 grams Cane sugar
- 80 cc Milk, cold
- 1 egg, beaten
For Jam:
- 2 Apples, peeled and removed cores (180-200 grams)
- 50-60 grams Granulated sugar
(30% of the weight of apples) - 1 Cinnamon stick
- 2 tbsp raisins
- 2 tsp Grated ginger
- 1 tbsp Lemon juice
Topping: 1 tbsp Cream cheese (optional)
Instructions
For Making Scones:
- Preheat the oven to 220 degrees centigrade. Prepare a baking tray with baking paper.
- Place flour, whole wheat flour, and baking powder to a large mixing bowl, and mix them until combined.
- Grab your butter from the fridge, and roughly chop it into 1-inch cubes.
- Add butter cubes to the flour and rub in until they are similar to wet sand or crumbles.
- Add sugar to the bowl and mix them briefly with your hand.
- Add cold milk to the bowl and mix them quickly with your hand until a soft scone dough forms.
- Toss and spread some flour on your bench, take the scone dough out there.
- Roll out the dough and fold it in two.
- And then roll out the dough until 1 inch thick.
- Use scone cutter to cut out scones and carefully transfer them to your prepared tray. You can form the fifth one with your hands into the same shape with others.
- Put beaten egg over tops with pastry brush.
- Bake the scone dough for 10 and a few minutes until their tops turn on golden brown
For Making Jam:
- Slice apples into quarter-rounds and soak them into salt water to prevent they discolor.
- Drain sliced apples. Now place apples, sugar, cinnamon stick, grated ginger into a pot. Cover it and simmer on low heat for 10 minutes.
- Add raisins to the pot. Simmer for further 10 minutes, mixing from the bottom of pot with a wood spatula from time to time (break apples out until the shape you like).
- Remove from the heat. Add lemon juice to the pot, mix briefly.
Serve with generous spoonful of the jam and cream cheese! (or clotted cream)
Notes
- If you use a glass as substitute of scone cutter, the thinner glass would be better for the scone dough rises.
- I recommend a copper or enamel pot for making jam because they have good heat conduction. An aluminum pot is weak for acid, so jam might discolor. A stainless pot easily gets a burn on the surface when you lose your attention.
- It is also delicious and aromatic to add some spices, such as mastered seeds, cloves, and cardamoms.
